About Matcha 101 - An Introduction Class

You might think of Matcha as an ingredient: like flour in a bakery. The flour itself isn’t special: the baked goods are. When we see an amazing cake like this we don’t think about the flour.

Heritage Matcha is nothing like this. It’s more like wine. Yes, there are recipes that use wine. But when we think about an expensive bottle of wine we don’t think “ingredient” for a cocktail. The wine is the product itself. Like wine, Matcha is the result of master blenders, growing techniques handed down through generations, specific varieties of tea bushes, the soil sky and air of the terroir which changes from year to year.

About Ooika Labs (覆い香の研究会)

Ooika's mission is to preserve heritage Matcha across Japan. For something to be worth preserving, you must first understand and appreciate it. Matcha is often marketed as exotic and mysterious, which can feel overly romantic and pretentious for beginners.
