What is Matcha before it’s ground into powder? It’s an unrefined “crude tea” known as Tencha. We sell the Kuradashi Zairai Tencha Wazuka (在来) we stone-mill here in Lawrenceville NJ into this Matcha. It’s an educational (and tasty) way to dive deeper into Matcha and Matcha production.
About This Matcha
Most Matcha (and produce we consume like corn, berries, etc…) is made from asexual clone cultivars. Cultivars have predictable tastes and harvest times associated with them that make them more economical to produce than seed-grown, heirloom plants known as Zairai (在来).
This Matcha comes from a lot that grows Zairai tea plants. It is a rare experience to taste a Zairai Matcha, and we’re happy to provide it! This Matcha is also cold-aged in a process known as Kuradashi. This helps mellow out the tannic high notes and brings out more oceanic flavor in the Matcha.
