The Craft of Matcha
Not all matcha is created equal. Just like in single-origin coffee, Matcha has unique growing terroirs, cultivars, and production technique that influence the taste, and price, of the final tea.
Over the course of an hour, we’ll cover the basics of Matcha cultivation, production and milling so you can understand what single-origin craft Matcha is.
Most importantly you’ll have a foundation in Matcha knowledge to determine the quality of any Matcha you drink.
What you’ll Learn:
Why “Ceremonial and Culinary” tell you nothing about Matcha’s quality, and instead what does.
What Matcha is, and what Matcha isn’t, and where authentic Matcha is from, and why it matters.
Experiencing the different cultivars, or varieties of Matcha, like the different varieties of grapes in wine.
Decoding the elements of judging Matcha quality: harvest method, shading type, shading style, vintage and more.
Why the highest quality Matcha is never organic.
Why stone-milling Matcha is so challenging but necessary - and why mill dates are necessary for buying Matcha.
Skip the Trip to Japan
Gain a foundational level of Matcha knowledge without spending the time or money on flights, hotels, and food (while delicious) in Japan.
Who the Class is For
For whose who want to deepen their understanding and appreciation of Matcha as a heritage product. Like fine wine or craft coffee.
The Flagship Matcha Knowledge Course
The Craft of Matcha is the result of nearly half a decade of experiencing visiting, talking to, and working with some of Japan’s most highly awarded Matcha producers.
The information within the Craft of Matcha does not come from blog posts or books - but from the tea fields themselves.
Oral histories, anecdotes, and multiple harvests open up to you and nine other students as we uncover what Matcha really is.
