Japan's 2023 Matcha Preparation

Matcha Nōto (抹茶ノート) is Ooika's monthly newsletter. Join here free to learn more behind-the-scenes about high-grade Matcha. This edition was sent out Mid June, 2023.

I'm in Japan to meet many of the farmers across the country who supply their single-origin, single-cultivar Tencha (unground Matcha) with Ooika. There are a few exciting updates I want to share with you.

The 2023 Harvest

Good news and bad news. The bad news is… I'm a bit late getting to Japan. Most of the harvesting for the first harvest (known as Ichibancha Shincha) has already been completed.

That material is then steamed (to prevent oxidation), processed into Tencha (veins and stems removed), and stored (for its aging process known as Jukusei.)

The good news is that while I personally missed some of that process – you won't miss the experience of tasting these teas, as Ooika has reserved many teas from the most awarded farmers across Japan. These 2023 Matcha will be available in Autumn, as the material finishes its aging process.

Follow Ooika in Japan!

For the entire month of June, Ooika will be in Japan—visiting the farmers, speaking with the farmers, and sharing stories. You'll be right beside me as we taste new Matcha, share invigorating conversations, and access a hidden world of Japanese tea.

We'll be sending out emails, but the best way to experience all of this with Ooika is to follow our new Tik Tok and YouTube channel. Hope to see you there!

Sincerely,

Marc
